If you are craving for something hot, crispy and crunchy on a cold rainy day with your cup of hot masala chai then look no further; these hot masala dal vadas are the perfect bites with your evening tea.

Chana dal vada or commonly known as masala vada is made by coarsely grinding the soaked chana dal along with ginger and green chili. To this coarse mixture chopped onion, herbs and spices are added. This flavoursome dough is shape to patties and deep fried till golden in colour.

What makes these vadas so addictive is the crunch of the onion in each bite and flavour of the curry leaves which I love the most. I always enjoy the delectable vadas with tomato ketchup and green chili. A cup of hot masala chai is icing on the top.

Vadas are usually served as a tea time snack , it makes a great breakfast though when served with coconut chutney. This crispy delight can be served at various occasions and festive times as it goes well with all. So try out this recipe which gives you delicious, crispy , crunchy vadas.

Prep time : 3-4 hours for soaking

Cooking time : 10 minutes

Serving : 8 in nos.


  • 1 Cup chana dal

  • 1 Inch ginger piece

  • 1-2 Green chili

  • 1 Medium onion choppes

  • 5-7 Curry leaves

  • 2 Tbsp chopped fresh coriander leaves

  • 1 1/2 Tsp salt

  • 1/2 Tsp crushed black pepper

  • 1/2 Tsp crushed cumin seeds

  • Pinch of asafoetida

  • 1/4 Tsp red chili flakes


1. Wash and soak chana dal for 3 to 4 hours. 

2. After the soaking time, drain the water in which dal was soaked and wash the dal again.

3. Transfer the dal to grinder along with ginger and green chili.

4. Grind to a coarse mixture, try not to add more than a tablespoon water while grinding.

5.Transfer the mixture to a bowl. Add onions, coriander leaves, curry leaves and all herbs and spices. 

7. Mix until all ingredients are combined. Divide the dough in 8 or 9 equal portions. Shape each portion into a pattie.

8. Deep fry till golden in colour.

9. Serve hot with tomato ketchup or coconut chutney and enjoy it with your masala chai.
