FRUIT CUSTARD
Fruit Custard delicious Summer Dessert , full with the goodness of fresh fruits.
Fruit custard is one of those dessert with which a lot of childhood memories are associated. As the summer made its appearance so did this dessert in our home. My mom made this dessert frequently with lot of fresh fruits in it. Sometimes she added chunks of raspberry or strawberry jelly to it and it was like icing on the top.
The base for this dessert custard sauce is made by boiling milk with vanilla flavoured custard powder and sugar till it thickens to desired consistency. You can add cardamom powder to it if you like its essence but I prefer to have it in the pure vanilla form. The sauce is then chilled and mixed with seasonal fruits.
Now, what all fruits can be added ?
You can add fruits of your choice like apple, banana, mango, grapes, pomegranate, kiwi etc. Add matured kiwi that is sweet.
Avoid adding too watery fruits like watermelon and melon.
If you want to add pineapple go with the canned one that is sweet as compared to fresh one which tends to be sour and does not go well with this dessert.
You can also add canned mixed fruits but I prefer to add fresh fruits.
This Fruit Custard is perfect for big gatherings as it is easy to make and does not require any fancy ingredients. Moreover it is love by kids and grown ups as well.
Serve it chilled and allow the fruits to sit in sauce for couple of hours to make the dessert more flavourful. Make the custard little thicker as it becomes thinner once fruits are added and they release their juices. If the custard is too thick add 2 to 3 tablespoon of warm milk and mix thoroughly.

Ingredients
3 Cup milk + 1/4 cup milk
3 Tbsp vanilla custard powder
1/4 Cup sugar
2 Cups mixed chopped fruits
Instructions
1. Add custard powder to 1/4 cup of milk and mix well to avoid any lumps, keep it aside.
2. Add milk to the pan on medium high heat and let it come to a boil.
3. Keep stirring the milk occasionally. Once the milk has boiled for 10 minutes add sugar to it.
4. Once the sugar has dissolved add custard mix and keep stirring continuously. Boil the mixture for around 5 minutes till it thickens. Switch off the flame and let the sauce cool a little. Then cover it and refrigerate to chill.

5.Transfer custard to serving bowl and mix in the fruits and serve chilled.
