Do you like Lassi ? .....................I love it !!!

What is Lassi ?

If you are not familiar with this drink, let me tell you that it is the most popular traditional drink in India ; a blend of yogurt and water/milk. A refreshing drink just made with minimal ingredients easily available at home.

Yogurt , curd or dahi in Hindi is an essential part of Indian cuisine. It is served with parathas for breakfast , raita or yogurt based kadhi for lunch. It is quintessential ingredient in all types of Indian chaat, be it papdi chaat, bhalla papdi or dahi vada.

These days in India yogurt is easily available in market but still the traditional method of setting yogurt is followed in all Indian households. Every night the Moms will set a pot of yogurt and hide it in the safest corner of the kitchen leaving it undisturbed till morning. The first thing they do even before having their morning tea is to check whether the yogurt has set firm. The sight of well set sweet yogurt kick starts their day with a pinch of yum.

Kudos to all Moms out there still following this practice!!!

Variations to lassi

Lassi either savoury or sweet is relished in both the ways. Savoury lassi is flavoured with spices and herbs commonly known as Masala Chaas in India. I had posted the recipe of Masala Chaas earlier. You may like it too.

Sweet lassi is has all the goodness yogurt and the sweetness of sugar. flavouring agents like cardamom or saffron are highly recommended to enhance the taste of lassi. This is the basic version of lassi all it started with. Then we have fruit based sweet lassi like mango lassi, strawberry lassi or peach lassi. Mango lassi is most popular fruit based refreshing drink during summers in India when market is flooded with a variety of mangoes. Do check out Mango Lassi with Kulfi recipe on my blog.

Rose Cardamom Lassi is my favorite !!!

The yogurt is whisked untill smooth. It is then flavoured with rose syrup and cardamom powder. The consistency is adjusted by adding water or milk as you like and you are done. You can add chilled water or some ice cubes. I added some ice cubes that adjusts the consistency and chill the lassi as well.

  • 1 Cup fresh yogurt

  • 1/2 Cup water (if needed)

  • 5 Tbsp rose syrup

  • 3 Green cardamom(freshly crushed)

  • Pistachio and rose petals to garnish(optional)


1. To a large glass cup add yogurt, rose syrup ,cardamom powder.

2. Whisk until there are no lumps in the yogurt and rose syrup is well blended.

3. Add some chilled water / milk or ice cube to adjust the consistency.

4. Chill in refrigerator before serving in a glass, garnish with pistachio and rose petals.

A glass with goodness of yogurt and freshness of rose........pure bliss!!!
